<p>This week I wanted to share another special recipe. I absolutely love to cook and try new recipes for our breakfasts here at The Spring Lighthouse. But I also like to make special treats for our guests to snack on as they come and go throughout the day. One of my latest favorites has been a chocolate orange biscotti. It is absolutely delicious by itself, or dipped in tea or coffee.</p>
<p>A must for me with all of my recipes is that it is not only delicious but easy. Let me assure you this recipe is both.</p>
<p>The Recipe is as follows:</p>
<p>Chocolate Orange Biscotti</p>
<p><strong>Ingredients</strong></p>
<p>2 ½ cups all purpose flour<br/>2 tsp baking powder<br/>¼ tsp salt<br/>½ cup butter (one stick) softened<br/>1 cup granulated sugar<br/>2 Tbsp orange zest<br/>2 Tbsp orange juice<br/>2 eggs<br/>½ tsp vanilla<br/>1 egg white<br/>8 oz. dark chocolate, cut into chunks</p>
<p><strong>Instructions</strong><br/>Preheat oven to 325 degrees</p>
<p><br/>In a small bowl, mix together the flour, baking powder, and salt; set aside.</p>
<p><br/>In a large mixing bowl, beat together butter, sugar, and orange zest until fluffy. Add in orange juice, eggs, and vanilla. Beat until well combined. Add flour mixture to butter mixture in 2 additions, mixing until just combined.</p>
<p><br/>Divide the dough in half. On a lightly floured surface, roll each into a 12x5-inch rectangle, and place each rectangle 2 inches apart on a parchment-lined baking sheet.</p>
<p><br/>Combine egg white with 1 tsp water and liberally brush over the top of biscotti.<br/>Bake for about 30 minutes until lightly golden and just firm to touch. Let cool on a pan for 10 minutes.</p>
<p><br/>Transfer logs to a cutting board. Using a chef’s knife, cut diagonally (at about a 45 degree angle) into ½ -inch slices. Stand each piece upright and place back on the sheet.</p>
<p><br/>Melt chocolate in microwave-safe dish for 2 minutes, stirring after 30 second increments to prevent the chocolate from burning. Either dip or spread the chocolate over each biscotti.</p>
<p>Place back on the baking sheet and refrigerate until set, about 20 minutes.</p>
<p> <br/>Store in an airtight container in the fridge, to keep the chocolate firm. Leaving them at room temperature will yield a softer chocolate.</p>

I love to try (and taste) new recipes. </span></p>

<p><span style="font-weight: 400;">A favorite among our guests is our eggs roulade. It is easy and simple, but it looks and tastes elegant and refined. Since this recipe is requested more than others I thought I would share this recipe on our website. </span></p>
<p></p>
<p><span style="font-weight: 400;">There are many reasons I love this dish. One reason being that this dish will hold well in a 250 degree oven after it has been baked if you need to wait to serve the dish. Another reason I love to cook this dish is its versatility. This dish can range in flavors all across the board to fit any mood or craving you are having for breakfast. I included some guests’ favorites below the recipe. </span></p>
<p></p>
<p><span style="font-weight: 400;">Eggs Roulade</span></p>
<p><span style="font-weight: 400;">Serves 6</span></p>
<p></p>
<p><span style="font-weight: 400;">Ingredients:</span></p>
<ul>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">8 eggs</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">2 Cups Heavy Whipping Cream</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">1 teaspoon salt</span></li>
</ul>
<p></p>
<p><span style="font-weight: 400;">Directions:</span></p>
<ol>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">Prepare the sheet pan by lightly greasing, then add a large enough piece of parchment paper to overlap the edges of the sheet pan. Lightly grease the parchment paper also. </span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">Whisk ingredients together in a large bowl until completely combined.</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">Pour egg mixture into pan and bake at 350 degrees for 15 minutes or until eggs are set. </span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">Let cool for 5 minutes before adding desired filling.</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">Once filling has been added roll egg (jelly roll style short end facing you). Cover with parchment pieces and trim off excess. Cover with foil and bake at 400 degrees for 20 minutes or until hot. </span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">Serve and enjoy! </span></li>

<p><span style="font-weight: 400;">Guest Favorites</span></p>
<p><b>Sundried Tomato, Basil, and Sharp White Cheddar</b></p>
<ul>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">8 oz shredded Sharp White Cheddar cheese</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">½ c. sundried tomatoes, chopped into small pieces</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">½ c. chopped fresh basil</span></li>
</ul>
<p></p>
<p><span style="font-weight: 400;">Soak tomatoes in hot water while eggs are cooking. After eggs are baked the first time, sprinkle eggs with cheese then tomatoes and basil. Season with salt and pepper, jelly roll eggs, and bake covered at 400 degrees. </span></p>
<p></p>
<p><b>Roasted Red Pepper, Green onion, and White Cheddar</b></p>
<ul>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;"> 8 oz shredded Sharp White Cheddar cheese</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">½ c. chopped roasted red pepper</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">¼ to ½ c. green onions</span></li>
</ul>
<p></p>
<p><b>Roasted Tomato, Caramelized onions, and cheese</b></p>
<ul>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">4 Roma tomatoes diced</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">1 sweet onion</span></li>
<li aria-level="1" style="font-weight: 400;"><span style="font-weight: 400;">8 oz shredded Sharp White Cheddar cheese</span></li>
</ul>
<p></p>
<p><span style="font-weight: 400;">Place diced tomatoes on sheet pan and drizzle with olive oil. Roast in 400 degree oven for 30 minutes or until brown and slightly starting to dry. Cool slightly before adding to eggs roulade. </span></p>
<p><span style="font-weight: 400;">Caramelize onions in oil over low heat for 45 minutes. Cool slightly before adding to eggs roulade. </span></p>

<p>The light snow falling and the cold air are like a cleansing of the soul for me and I love the winter. </p>
<p>We have had the fireplaces roaring and the hot cocoa pouring for our recent guests. We are making the most of the cold weather.</p>
<p>So recently, when I was visiting Townline Ciderworks (our local hard cider maker), I noticed a sign-up sheet for their 3rd annual chili cook off.</p>
<p>Pencil in hand I signed up on the spot. Nov 16th from 5-7 pm you can come join us for a taste of winter and the best cider around!</p>

<p>This beautiful region of Northern Michigan offers some of the most delicious produce and vegetables and we use them in so many ways. Asparagus Veloute with poached egg and Swiss cheese can be proceeded by a delicious peach soup and fresh baked French bread with cherry preserves. </p>
<p>If Sweet is your thing then perhaps we will make you Belgian waffles with local maple syrup and fresh fruits. Orange and cranberry pancakes are a fall favorite. </p>
<p>The array of goodies are endless and you really never know what delicious treats await you here at The Spring Lighthouse. </p>
